Instructions
- Preheat your oven to 350°F (175°C).
- In an oven-safe skillet, heat olive oil over medium heat. Add chopped onions and bell peppers; sauté until softened.
- Stir in chopped spinach, salt, and pepper, cooking until spinach wilts (about 2 minutes).
- Whisk the eggs in a bowl until frothy; pour over the sautéed vegetables in the skillet.
- Gently stir to combine while keeping some veggies visible on top.
- Bake in the preheated oven for 20-25 minutes until puffed and set.
