- 12 oz Cajun sausage, sliced
- 1 cup bell peppers, chopped (mix of red, green, yellow)
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 cup long-grain rice
- 2 cups low-sodium chicken broth
- 2 tsp Cajun seasoning
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- 1. Heat olive oil in a large skillet over medium heat. Add sliced Cajun sausage and cook until browned.
- 2. Stir in chopped onions and bell peppers; sauté until onions are translucent and peppers are tender (about 5 minutes).
- 3. Add minced garlic and cook until fragrant (about 1 minute).
- 4. Stir in long-grain rice until coated with oil. Pour in chicken broth and sprinkle Cajun seasoning over everything.
- 5. Bring to a boil, then cover with a lid, reduce heat to low, and simmer for about 20 minutes or until rice is tender.
- 6. Fluff the rice with a fork before garnishing with fresh parsley. Serve hot.
