- 1 lb lean ground turkey
- 2 medium zucchinis, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup bell peppers (red or yellow), chopped
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Wash and chop the zucchini, onion, and bell peppers into bite-sized pieces.
- Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic; cook until translucent (3-5 minutes).
- Stir in ground turkey, breaking it apart with a spatula. Cook until browned (6-8 minutes).
- Mix in zucchini and bell peppers; cook until tender yet crisp (4-5 minutes).
- Sprinkle Italian seasoning, salt, and pepper. Stir to combine.
- Remove from heat and enjoy hot either directly from the pan or plated.
