- 1 lb beef sirloin, thinly sliced
- 8 oz mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- ½ cup sour cream
- 1 cup low-sodium beef broth
- 2 tbsp Dijon mustard
- Egg noodles or rice for serving
Instructions
- Sauté onions and mushrooms in butter over medium heat until softened (about 5 minutes).
- Increase heat to medium-high; add beef and cook until browned (3-4 minutes).
- Stir in garlic and cook until fragrant (1 minute).
- Add beef broth and mustard; bring to a simmer (5 minutes).
- Reduce heat to low; mix in sour cream.
- Serve over cooked egg noodles or rice.
