Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1 cup crumbled feta cheese
- Juice of 1 lemon
- 4 garlic cloves, minced
- 2 tsp dried oregano
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Prep your ingredients by chopping chicken into bite-sized pieces and mincing garlic.
- In a large skillet over medium heat, heat olive oil. Add chicken pieces and cook until golden brown for about 6-8 minutes.
- Stir in minced garlic and oregano; sauté for another minute until fragrant.
- Pour in 2 cups of broth (or water) and add orzo. Bring to a boil, cover, reduce heat, and simmer for 10-12 minutes until orzo is tender.
- Fold in cherry tomatoes, spinach, and crumbled feta; cook for an additional 3-4 minutes until spinach wilts.
- Finish with fresh lemon juice before serving.
