  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach

  • 2 tsp dried oregano
  • 3 tbsp extra virgin olive oil

Instructions

  1. Prep your ingredients by chopping chicken into bite-sized pieces and mincing garlic.
  2. In a large skillet over medium heat, heat olive oil. Add chicken pieces and cook until golden brown for about 6-8 minutes.
  3. Stir in minced garlic and oregano; sauté for another minute until fragrant.
  4. Pour in 2 cups of broth (or water) and add orzo. Bring to a boil, cover, reduce heat, and simmer for 10-12 minutes until orzo is tender.
  5. Fold in cherry tomatoes, spinach, and crumbled feta; cook for an additional 3-4 minutes until spinach wilts.
