- 1 cup unsalted butter (room temperature)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 cups all-purpose flour (sifted)
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp pure vanilla extract
- 1/2 cup raspberry jam
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 3-5 minutes).
- Gradually mix in the sifted flour, baking powder, and salt until just combined.
- Stir in the vanilla extract.
- For the crumble topping, combine equal parts flour and brown sugar with cold butter until crumbly.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet. Make a small indentation in each cookie center and fill it generously with raspberry jam.
- Sprinkle the crumble mixture on top of each cookie.
- Bake for 12-15 minutes or until edges are golden brown.
- Allow to cool on wire racks before serving.
