- 12 oz fresh or frozen tortellini
- 1 lb lean ground beef
- 2 cups sharp cheddar cheese, shredded
- 1 cup enchilada sauce
- ½ cup sour cream
- 1 tsp cumin
- 1 tsp chili powder
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- ½ cup chicken broth
Instructions
- In a large skillet, heat 1 tbsp olive oil over medium heat. Add chopped onion and minced garlic; sauté until translucent.
- Add lean ground beef and cook until browned, breaking it apart as it cooks.
- Stir in cumin, chili powder, and enchilada sauce. Let simmer for about 5 minutes.
- Stir in cooked tortellini and half of the cheddar cheese until well combined.
- Preheat the oven to 350°F (175°C). Transfer the mixture into a baking dish, top with remaining cheese, and bake for 20-25 minutes until golden brown.
