- 1 cup pumpkin puree
- 1/2 cup pure maple syrup
- 1/2 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 large egg
- 1/4 cup unsalted butter (melted)
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix pumpkin puree, melted butter, brown sugar, maple syrup, egg, and vanilla until smooth.
- In another bowl, combine flour, baking soda, cinnamon, nutmeg, and salt. Gradually add the dry mixture to the wet ingredients until just combined.
- Drop rounded tablespoons of dough onto the prepared baking sheet with space in between.
- Bake for 10-12 minutes or until edges are set but centers remain soft. Allow cooling for about 5 minutes before transferring to wire racks.
