  • 1 large egg
  • 1/4 cup unsalted butter (melted)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix pumpkin puree, melted butter, brown sugar, maple syrup, egg, and vanilla until smooth.
  3. In another bowl, combine flour, baking soda, cinnamon, nutmeg, and salt. Gradually add the dry mixture to the wet ingredients until just combined.
  4. Drop rounded tablespoons of dough onto the prepared baking sheet with space in between.
  5. Bake for 10-12 minutes or until edges are set but centers remain soft. Allow cooling for about 5 minutes before transferring to wire racks.
