Instructions
- Marinate chicken thighs in olive oil and shawarma spices for at least one hour or overnight for optimal flavor.
- Preheat grill or skillet over medium-high heat; cook marinated chicken for about 6 minutes per side until fully cooked (165°F internal temperature).
- Allow the chicken to rest briefly before slicing it into strips.
- In bowls, layer greens or rice then top with sliced chicken, cherry tomatoes, diced cucumber, and drizzle with a yogurt sauce made by mixing Greek yogurt with lemon juice.
