- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 4 (8 oz) packages full-fat cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 4 large eggs
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until crumbly. Press into the bottom of a springform pan.
- Bake the crust for 10 minutes until golden brown. Let it cool.
- Beat cream cheese in a large mixing bowl until smooth. Gradually add sugar and blend well.
- Add eggs one at a time, then stir in sour cream and vanilla until fully combined.
- Pour filling over the cooled crust and bake for 60-70 minutes until slightly jiggly in the center.
- Turn off the oven and let cheesecake cool inside with the door ajar.
- Refrigerate for at least four hours before serving.
