- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup sour cream
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 2 cups fresh strawberries, sliced
- 2 tbsp lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter until blended. Press firmly into the bottom of a springform pan and bake for 10 minutes. Allow to cool.
- In another bowl, beat softened cream cheese until smooth. Mix in sugar, sour cream, lemon juice, and vanilla extract until fully combined.
- Pour the filling over the cooled crust and smooth out the top with a spatula. Bake for 50-60 minutes until slightly jiggly in the center.
- Turn off the oven and leave the cheesecake inside for an hour to cool gradually.
- Chill overnight in the refrigerator. Top with fresh strawberries just before serving.
