  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries, sliced
  • 2 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter until blended. Press firmly into the bottom of a springform pan and bake for 10 minutes. Allow to cool.
  3. In another bowl, beat softened cream cheese until smooth. Mix in sugar, sour cream, lemon juice, and vanilla extract until fully combined.
  4. Pour the filling over the cooled crust and smooth out the top with a spatula. Bake for 50-60 minutes until slightly jiggly in the center.
  5. Turn off the oven and leave the cheesecake inside for an hour to cool gradually.
  6. Chill overnight in the refrigerator. Top with fresh strawberries just before serving.
