- 1 cup long-grain rice
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup bell peppers, diced (any color)
- 2 cups low-sodium beef broth
- 2 tbsp soy sauce (low-sodium preferred)
- 1 tsp cumin
- 1 tsp paprika
- ¼ tsp black pepper
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onions and minced garlic, sauté until fragrant and translucent.
- Increase heat slightly and add ground beef; cook until browned, breaking it apart with a spoon (5-7 minutes).
- Stir in diced bell peppers along with cumin and paprika; cook for about 3 minutes until tender.
- Add rinsed rice, beef broth, and soy sauce to the skillet; bring to a boil while stirring gently.
- Reduce heat to low, cover tightly, and simmer for 20 minutes until rice is fluffy and liquid is absorbed.
- Fluff the rice with a fork, adjust seasoning if needed, and serve hot.
