- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream (or half-and-half)
- 1 cup long-grain white rice
- 1 medium onion, thinly sliced
- 2 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Prep your ingredients by chopping onions and mincing garlic.
- In a large skillet over medium-high heat, add olive oil and sear the seasoned chicken breasts for about 5 minutes on each side until golden brown. Remove from skillet.
- Add chopped onions and garlic to the skillet; sauté until onions are translucent.
- Pour in chicken broth and heavy cream; stir well while scraping up any brown bits from the skillet.
- Return the seared chicken to the skillet, cover, and let simmer on low heat for about 15 minutes until cooked through.
- Meanwhile, cook rice according to package instructions until fluffy.
- Serve the creamy chicken over rice and enjoy!
