- 1 cup ground sausage (mild or spicy)
- 1 cup shredded sharp cheddar cheese
- 1 ½ cups all-purpose flour
- 2 tsp baking powder
- 2 large eggs
- ¾ cup whole milk
- ½ tsp salt
- ¼ tsp freshly ground pepper
Instructions
- Preheat your oven to 375°F (190°C) and grease or line a muffin tin with paper liners.
- In a skillet over medium heat, cook the ground sausage until browned. Break it into crumbles as it cooks.
- In a large mixing bowl, whisk together flour, baking powder, salt, and pepper.
- In another bowl, whisk together eggs and milk until frothy. Add the cooked sausage and half of the cheddar cheese; mix well.
- Gently fold the wet mixture into the dry ingredients until just combined—be careful not to overmix.
- Spoon the batter into muffin tins until two-thirds full and top with remaining cheese.
- Bake for 20-25 minutes, or until golden brown and a toothpick inserted comes out clean.
