Ingredients
- 3–4 boneless, skinless chicken breasts
- 2–3 cloves fresh garlic, minced
- 1 medium onion, chopped
- 4 cups low-sodium chicken broth
- 1 block cream cheese, softened
- 2 cups jasmine or long-grain rice
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet over medium heat, add olive oil and sauté onions and garlic until translucent.
- Season chicken with salt and pepper; add to skillet and cook until golden brown on both sides.
- Pour in chicken broth; mix in cream cheese until melted. Simmer for 5 minutes.
- Stir in uncooked rice; cover and cook on low heat for about 20 minutes until rice absorbs moisture.
- Serve hot, garnished with fresh parsley if desired.
