- 3 boneless, skinless chicken breasts (approx. 1 lb)
- 8 oz fresh chorizo sausage (casings removed)
- 8 oz penne pasta
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 3 cloves garlic (minced)
- 2 cups fresh spinach
- 2 tbsp olive oil
- 1 tsp paprika
- ½ tsp chili flakes (adjust to taste)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced chorizo and cook until browned and crispy.
- Mix in minced garlic and then add diced chicken breasts; cook until golden brown and juicy.
- Boil salted water in a separate pot; add penne pasta and cook until al dente (about 8-10 minutes).
- Drain pasta and combine with the skillet mixture. Pour in heavy cream and stir to coat everything evenly.
- Fold in Parmesan cheese until smooth, then add fresh spinach; stir until wilted.
- Season with paprika, chili flakes, salt, and pepper before serving.
