- 4 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 3 cups low-sodium chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach
- 4 cloves garlic, minced
- Zest of 1 lemon
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions
- Prepare all ingredients by chopping garlic and zesting the lemon.
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper and sear for 5-7 minutes per side until golden brown.
- Add minced garlic and sauté for 1 minute until fragrant.
- Pour in chicken broth and add orzo. Bring to a simmer and cook for 10-12 minutes until orzo is tender.
- Stir in heavy cream and lemon zest; simmer for an additional few minutes.
- Fold in spinach until wilted, then sprinkle with Parmesan cheese, stirring until creamy.
