- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup sun-dried tomatoes (oil-packed)
- 2 cups fresh baby spinach
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium heat.
- Sear chicken for 5-7 minutes per side until golden brown and cooked through (internal temp of 165°F).
- Remove chicken, add garlic and sun-dried tomatoes to the skillet, sautéing for 1-2 minutes.
- Stir in heavy cream; simmer gently for 3-4 minutes until thickened.
- Add spinach and Parmesan cheese; stir until combined.
- Return chicken to skillet, spoon sauce over it, and cook an additional minute before serving.
