- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cups fresh spinach
- 8 oz cremini mushrooms, sliced
- 1 cup heavy cream
- 4 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp dried Italian herbs (oregano and basil)
Instructions
- Prepare the ingredients by chopping chicken into bite-sized pieces and mincing garlic.
- Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until golden brown (5-7 minutes). Remove from skillet.
- In the same skillet, add garlic and mushrooms; sauté until mushrooms are soft (3-4 minutes).
- Stir in fresh spinach until wilted.
- Pour in heavy cream while stirring continuously; add Parmesan cheese and dried herbs. Simmer for about 5 minutes until slightly thickened.
- Return chicken to the skillet; mix well before serving.
