- 3–4 boneless, skinless chicken breasts
- 2 cups cannellini or great northern beans
- 4 cups low-sodium chicken broth
- 1 can (4 oz) green chilies (mild or hot)
- 8 oz cream cheese
- 2 tsp cumin
- 2 tsp oregano
- 1 tsp chili powder
- ½ cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- In a large pot over medium heat, add a splash of oil and cook the chicken until golden brown and cooked through. Remove and let rest.
- Sauté chopped onions and garlic in the same pot until fragrant (about 2-3 minutes). Stir in cumin, oregano, and chili powder.
- Shred the rested chicken and return it to the pot along with white beans, green chilies, and chicken broth. Mix well.
- Lower heat and stir in cream cheese until melted and incorporated.
- Simmer for about 20 minutes to meld flavors together.
- Before serving, add lime juice and cilantro; give it a final stir.
