- 3–4 boneless, skinless chicken breasts
- 2 large eggs
- 1 cup panko breadcrumbs

- 2 tablespoons Dijon mustard
- 1 teaspoon garlic powder

Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut chicken breasts into strips about one inch wide.
- Whisk eggs in a bowl; in another bowl, mix panko breadcrumbs, garlic powder, salt, and pepper.
- Dip each chicken strip into the egg wash then coat with the panko mixture.
- Arrange coated strips on the baking sheet in a single layer and lightly spray with olive oil.
- Bake for 20-25 minutes, flipping halfway through until golden brown and cooked through.
- In a small bowl, combine honey and Dijon mustard for the dip.
