Ingredients

  • All-purpose flour

  • Espresso powder

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, baking powder, sugar, espresso powder, and salt.
  3. In another bowl, beat eggs, milk, melted butter, and vanilla extract until creamy. Gradually mix with dry ingredients until just combined.
  4. Fill cupcake liners two-thirds full and bake for 18–20 minutes or until a toothpick comes out clean.
  5. While cooling, whip heavy cream until soft peaks form and fold in mascarpone cheese and powdered sugar.
  6. Frost cooled cupcakes with the mascarpone mixture and dust with cocoa powder before serving.
