Ingredients

  • 1 can kidney beans (15 oz), rinsed and drained
  • 1 can black beans (15 oz), rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse canned beans under cold water until clear.
  2. Dice the red bell pepper and finely chop the red onion.
  3. In a large bowl, combine kidney beans, black beans, corn, bell pepper, onion, and cilantro. Toss gently.
  4. Drizzle with olive oil and lime juice; season with salt and pepper. Toss until evenly coated.
  5. Taste and adjust seasoning if necessary.
  6. Serve immediately or chill for an hour to enhance flavors.
