- 1 can kidney beans (15 oz), rinsed and drained
- 1 can black beans (15 oz), rinsed and drained
- 1 cup corn (fresh or frozen)
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse canned beans under cold water until clear.
- Dice the red bell pepper and finely chop the red onion.
- In a large bowl, combine kidney beans, black beans, corn, bell pepper, onion, and cilantro. Toss gently.
- Drizzle with olive oil and lime juice; season with salt and pepper. Toss until evenly coated.
- Taste and adjust seasoning if necessary.
- Serve immediately or chill for an hour to enhance flavors.
