Ingredients

  • 1 cup fresh blueberries (or frozen)

  • 2 tsp baking powder

  • 1 cup milk (dairy or plant-based)
  • ¼ cup vegetable oil or melted butter

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or non-stick spray.
  2. In one bowl, mix rolled oats, flour, baking powder, and sugar. In another bowl, whisk together eggs, milk, and oil until smooth.
  3. Gently fold the blueberries into the wet mixture, then combine both mixtures until just blended.
  4. Spoon batter into the muffin tin, filling each cup two-thirds full.
  5. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
  6. Allow to cool slightly before enjoying!
