- 1 cup rolled oats
- 1 cup fresh blueberries (or frozen)
- 1 cup all-purpose flour
- 2 tsp baking powder
- ½ cup granulated sugar
- 1 large egg
- 1 cup milk (dairy or plant-based)
- ¼ cup vegetable oil or melted butter
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or non-stick spray.
- In one bowl, mix rolled oats, flour, baking powder, and sugar. In another bowl, whisk together eggs, milk, and oil until smooth.
- Gently fold the blueberries into the wet mixture, then combine both mixtures until just blended.
- Spoon batter into the muffin tin, filling each cup two-thirds full.
- Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool slightly before enjoying!
