Instructions
- Chop the bell peppers and onions into small pieces for even cooking.
- Sauté the vegetables in a skillet over medium heat with a little oil until tender (about 5-7 minutes).
- Whisk the eggs in a bowl, then add to the skillet. Cook gently until fluffy.
- Mix in shredded cheese while the egg mixture is still hot to let it melt.
- Lay out tortillas, spoon filling onto one side, and roll tightly to enclose.
