- 6–7 medium fresh carrots
- 4 cups full-fat milk
- 3/4 cup sugar
- 3 tablespoons ghee (clarified butter)
- 1 teaspoon cardamom powder
- Chopped nuts (almonds & cashews)
- Raisins
Instructions
- Grate the carrots using a box grater or food processor and set aside.
- In a heavy-bottomed pan, melt ghee over medium heat. Add grated carrots and sauté for about 10 minutes until they soften.
- Pour in the full-fat milk and simmer on low heat for 30-40 minutes until thickened.
- Stir in the sugar and cook for an additional 5-10 minutes until well combined.
- Mix in cardamom powder, chopped nuts, and soaked raisins.
- Serve warm or chill in the fridge before serving.
