  • 67 medium fresh carrots
  • 4 cups full-fat milk
  • 3/4 cup sugar
  • 3 tablespoons ghee (clarified butter)
  • 1 teaspoon cardamom powder
  • Chopped nuts (almonds & cashews)
  • Raisins

Instructions

  1. Grate the carrots using a box grater or food processor and set aside.
  2. In a heavy-bottomed pan, melt ghee over medium heat. Add grated carrots and sauté for about 10 minutes until they soften.
  3. Pour in the full-fat milk and simmer on low heat for 30-40 minutes until thickened.
  4. Stir in the sugar and cook for an additional 5-10 minutes until well combined.
  5. Mix in cardamom powder, chopped nuts, and soaked raisins.
  6. Serve warm or chill in the fridge before serving.
