- 2 cups creamy mashed potatoes
- 1 cup shredded cheddar and mozzarella cheese
- 2 large eggs
- ¼ cup chopped green onions
- 1 tsp garlic powder
- 1 tsp baking powder
- Salt and pepper to taste
- ¼ cup melted butter
Instructions
- Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
- In a large mixing bowl, combine the mashed potatoes, cheese, eggs, green onions, garlic powder, baking powder, salt, pepper, and melted butter until well blended.
- Spoon the mixture into muffin cups, filling each about three-quarters full.
- Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
- Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.
