- 3–4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 3 cloves fresh garlic, minced
- 1 medium onion, chopped
- 2 tablespoons olive oil
- Your favorite spices (salt, pepper, paprika)
Instructions
- Finely chop the garlic and onion. Rinse the rice under cold water until clear.
- In a large skillet over medium heat, add olive oil. Sauté the onion until translucent; then add garlic until golden.
- Increase heat to medium-high, add seasoned chicken breasts, and brown for about 5 minutes on each side.
- Stir in the rinsed rice until coated in oil; pour in chicken broth to cover by about an inch.
- Bring to a gentle boil, reduce heat to low, cover, and simmer for 20 minutes or until liquid is absorbed.
- Remove from heat and let sit covered for 5 minutes before fluffing with a fork.
