Instructions

  1. Finely chop the garlic and onion. Rinse the rice under cold water until clear.
  2. In a large skillet over medium heat, add olive oil. Sauté the onion until translucent; then add garlic until golden.
  3. Increase heat to medium-high, add seasoned chicken breasts, and brown for about 5 minutes on each side.
  4. Stir in the rinsed rice until coated in oil; pour in chicken broth to cover by about an inch.
  5. Bring to a gentle boil, reduce heat to low, cover, and simmer for 20 minutes or until liquid is absorbed.
