Instructions
- 1. Prep: Chop red onion and cilantro, then heat oil in a skillet over medium heat.
- 2. Cook Chicken: Sear chicken breasts until golden (about 6-7 minutes per side). Shred in the skillet.
- 3. Season: Add cumin, paprika, salt, and pepper to the shredded chicken; mix well.
- 4. Combine: Fold in chopped onion and black beans (if using) while warm.
- 5. Assemble: Layer chicken mixture, sliced avocados, and cilantro on tortillas. Squeeze lime juice over the top before rolling tightly.
- 6. Sear Burritos: In a clean skillet, place burritos seam-side down; cook until golden brown on both sides (about 3-4 minutes each).
