Ingredients
- 3–4 boneless, skinless chicken breasts
- 2 cups fresh spinach
- ½ cup sun-dried tomatoes (packed in oil)
- 1 cup heavy cream
- 3 cloves garlic (minced)
- 1 teaspoon Italian seasoning
- Salt and pepper (to taste)
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat and cook the chicken until golden brown (about 5-7 minutes per side). Remove from skillet.
- In the same skillet, reduce heat to medium and sauté minced garlic for about one minute until fragrant.
- Add sun-dried tomatoes and Italian seasoning, then pour in heavy cream while stirring continuously. Simmer gently for about five minutes until slightly thickened.
- Stir in fresh spinach and cook until wilted (about two minutes). Return the chicken to the skillet and simmer on low heat for an additional five minutes.
- Serve hot over pasta or rice, drizzling the creamy sauce on top.
