Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, beat softened butter with granulated and brown sugars until fluffy.
- Mix in the egg and vanilla until smooth.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Scoop dough onto prepared sheets, spacing them apart.
- Bake for 10-12 minutes until edges are golden; cool for 5 minutes on sheets before transferring to wire racks.
- For filling, combine peanut butter, powdered sugar, and milk until smooth.
- Assemble cookies by spreading filling between two cookie halves.
