  4. Mix in the egg and vanilla until smooth.

  6. Scoop dough onto prepared sheets, spacing them apart.
  7. Bake for 10-12 minutes until edges are golden; cool for 5 minutes on sheets before transferring to wire racks.
  8. For filling, combine peanut butter, powdered sugar, and milk until smooth.
  9. Assemble cookies by spreading filling between two cookie halves.
