Ingredients
- 1 cup dried green or brown lentils
- 1 medium onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups low-sodium vegetable broth
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water until clear. Dice the onion, carrots, and celery.
- In a large pot over medium heat, sauté the onion, carrots, celery, and garlic in olive oil until softened (about 5 minutes).
- Stir in the rinsed lentils and cumin; mix well.
- Add vegetable broth to cover by about an inch. Bring to a boil, then reduce heat to low.
- Simmer uncovered for approximately 25-30 minutes until lentils are tender but firm.
- Season with salt and pepper before serving.
