- 1 cup dried apricots (halved)
- 1 large onion (chopped)
- 4 garlic cloves (minced)
- 1 cinnamon stick
- 2 tsp cumin powder
- 2 cups low-sodium chicken broth
- 3 tbsp olive oil
- Fresh cilantro or parsley (for garnish)
Instructions
- Prepare your ingredients: chop onions and garlic, and halve the apricots.
- Heat olive oil in a large pot over medium heat. Sauté onions until translucent, about 5 minutes.
- Season chicken thighs with salt and pepper, then brown them in the pot for 4-5 minutes on each side.
- Add minced garlic, cinnamon stick, and cumin powder; stir until fragrant.
- Pour in chicken broth and add apricots. Bring to a gentle boil, then reduce heat to low and cover. Simmer for 30-40 minutes.
- Ensure chicken reaches an internal temperature of 165°F before serving over couscous or rice. Garnish with fresh herbs.
