Ingredients
- 3 large eggs
- 1/4 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1/2 cup mixed vegetables (bell peppers, spinach, onions)
- Salt and pepper to taste
- 1 tablespoon olive oil or butter
Instructions
- Heat olive oil or butter in a non-stick skillet over medium heat.
- In a bowl, whisk together the eggs, salt, and pepper until well combined.
- Pour the egg mixture into the skillet and allow it to cook without stirring for about 2 minutes until the edges begin to set.
- Sprinkle mixed veggies evenly over one half of the omelette.
- Add cheese on top of the veggies and fold the other half of the omelette over them.
- Cook for another minute until the cheese melts and the eggs are fully cooked.
- Serve hot and enjoy!
