- 1 cup all-purpose flour

- 1 cup milk (whole or dairy-free)
- 1 large egg
- 2 tablespoons melted butter (or coconut oil)
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, beat the egg and mix in milk and melted butter until smooth.
- Pour the wet mixture into the dry ingredients and fold gently until just combined; lumps are okay.
- Preheat a non-stick skillet over medium heat and lightly grease it.
- Pour about half a cup of batter onto the skillet for each pancake. Cook until bubbles form on top (2-3 minutes), then flip and cook until golden brown (about 1 minute).
- Serve warm with maple syrup.
