- 1 cup canned pumpkin puree (100% pure)
- 1 cup rolled oats (old-fashioned)
- 1/2 cup peanut butter (creamy or crunchy)
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/2 cup protein powder (your favorite brand)
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 cup dark chocolate chips (optional)
Instructions
- In a large bowl, mix rolled oats, protein powder, cinnamon, and nutmeg until well combined.
- In another bowl, whisk together pumpkin puree, peanut butter, honey or maple syrup, and vanilla until smooth.
- Pour the wet mixture into the dry ingredients and mix until fully incorporated. If too dry, add a splash of water.
- Gently fold in chocolate chips if using.
- Roll the mixture into bite-sized balls and place them on a parchment-lined baking sheet.
- Chill in the refrigerator for at least 30 minutes before enjoying.
