Ingredients
- 1 pound boneless skinless chicken breasts
- 2 bell peppers (any color)
- 1 small red onion
- ¼ cup low-sodium soy sauce
- 2 tablespoons chili paste
- Cooked rice (for serving)
- Olive oil (for cooking)
Instructions
- In a bowl, mix soy sauce and chili paste. Add sliced chicken and marinate for at least 30 minutes.
- Slice bell peppers and red onion into thin strips.
- Heat oil in a skillet over medium-high heat. Add marinated chicken and cook for 6-8 minutes until golden brown.
- Add sliced veggies to the skillet and stir-fry for another 4-5 minutes until tender.
- Spoon rice into bowls, top with the chicken mixture, and drizzle with any remaining marinade.
