- 1 cup fresh spinach, chopped
- 1/4 cup crumbled feta cheese
- 1 tablespoon olive oil or butter
- Salt and pepper to taste
Instructions
- Wash the spinach under cold water and roughly chop it.
- In a bowl, whisk together the eggs, adding salt and pepper to taste.
- Heat olive oil or butter in a non-stick skillet over medium heat. Sauté the spinach until wilted (about 1-2 minutes).
- Pour the egg mixture over the sautéed spinach, tilting the pan to ensure even coverage.
- Sprinkle feta cheese on top and cover with a lid. Cook until eggs are set but slightly soft (approximately 3-4 minutes).
- Slide the omelette onto a plate and serve immediately.
