- 4 bell peppers (any color)
- 1 lb lean ground beef
- 1 cup cooked rice
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup shredded cheese (mozzarella or cheddar)
- Spices: cumin, paprika, salt, pepper
- Fresh herbs: parsley or basil
Instructions
- 1. Preheat oven to 375°F (190°C).
- 2. In a skillet, heat olive oil over medium heat and sauté onion until translucent. Add garlic and cook for an additional minute.
- 3. Add ground beef and cook until browned; drain excess fat if necessary.
- 4. Mix in cooked rice, diced tomatoes, and spices; let simmer for 5-7 minutes.
- 5. Prepare bell peppers by slicing off the tops and removing seeds. Place them upright in a baking dish.
- 6. Stuff each pepper with the beef mixture and top with cheese. Cover with foil and bake for 25 minutes; uncover and bake an additional 10-15 minutes until cheese is bubbly.
