- 1 ½ cups crushed animal cookies
- 5 tablespoons unsalted butter
- 16 oz cream cheese
- 1 cup sour cream
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup heavy whipping cream
- Colorful sprinkles for topping
Instructions
- Preheat the oven to 325°F (160°C). Crush animal cookies into fine crumbs.
- Melt butter and mix with cookie crumbs until resembling wet sand. Press into the bottom of a springform pan.
- Bake crust for 10 minutes until golden brown.
- In a bowl, beat softened cream cheese until smooth. Add sugar and sour cream; mix until fluffy.
- Incorporate vanilla extract and eggs one at a time, mixing gently.
- Pour filling over crust and bake for 60 minutes until slightly jiggly in the center.
- Turn off the oven and leave cheesecake inside with the door ajar for an hour to cool.
- After cooling (about 4 hours), whip heavy cream to soft peaks, spread over cheesecake, and top with sprinkles.
