- 1 cup graham cracker crumbs
- 4 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
- 1/2 cup fresh key lime juice (about 4–5 key limes)
- 8 oz cream cheese, softened
- 1 cup sweetened condensed milk
- 1 cup whipped cream (for topping)
- Zest of 2 key limes (for garnish)
Instructions
- Prepare the crust by mixing graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of mini pie tins or muffin cups.
- In a mixing bowl, beat softened cream cheese until smooth. Gradually add sweetened condensed milk while mixing. Then stir in fresh lime juice and zest until well-blended.
- Spoon the filling into each crust and smooth the tops gently with a spatula.
- Refrigerate for at least two hours to allow the pies to set.
- Once chilled, top each mini pie with freshly whipped cream and additional lime zest before serving.
