- 1 lb lean ground beef
- 3 tbsp low-sodium soy sauce
- 2 tbsp brown sugar
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 green onions, chopped
- 1 tbsp sesame oil
- 2 cups cooked white or brown rice
- Assorted vegetables (bell peppers, carrots)
Instructions
- Cook the rice according to package instructions and set aside.
- In a large skillet over medium heat, add sesame oil and sauté garlic and ginger until fragrant (about 1 minute).
- Add ground beef, breaking it apart with a spatula. Cook until browned (5-7 minutes).
- Stir in soy sauce and brown sugar; simmer for an additional 3-5 minutes.
- Add your choice of vegetables and cook until tender (3-4 minutes).
- Serve the beef mixture over rice and garnish with chopped green onions.
