- Large flour tortillas
- Eggs
- Cooked sausage or bacon
- Shredded cheddar cheese
- Salsa
Instructions
- In a skillet over medium heat, cook your choice of sausage or bacon until crispy. Remove from heat.
- Whisk eggs in a bowl with salt and pepper. In the same skillet with the residual fat, scramble the eggs over medium-low heat until just cooked.
- Lay a tortilla flat and layer scrambled eggs, cooked meat, shredded cheese, and salsa in the center.
- Fold in the sides of the tortilla and roll tightly to secure the filling.
- Place wrapped burritos seam-side down in the skillet on medium heat for about two minutes on each side until warmed through.
- Serve immediately with extra salsa or avocado slices.
