- 3–4 boneless skinless chicken breasts
- 2 carrots (sliced)
- 2 celery stalks (chopped)
- 1 diced onion
- 4 cups low-sodium chicken broth
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 cup milk
- ¼ cup melted butter
Instructions
- Dice chicken into bite-sized pieces and brown in oil over medium heat, seasoning with salt and pepper.
- Remove chicken, sauté onions, carrots, and celery in the same pot until softened.
- Add chicken broth and reserved chicken juices; bring to a simmer.
- Mix flour, baking powder, milk, and melted butter in a separate bowl to form the dumpling dough.
- Drop spoonfuls of dough into simmering broth, cover tightly, and cook for 15 minutes without lifting the lid.
- Stir in cooked chicken before serving.
