- 3–4 boneless, skinless chicken breasts
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups mixed vegetables (fresh or frozen)
- 2 cups chicken broth
- 1 cup biscuit mix
- 1/2 cup milk
- Olive oil, salt, and pepper
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a skillet, heat olive oil over medium heat. Sauté diced onion until translucent (about 5 minutes). Add minced garlic and cubed chicken; cook until golden brown (7-10 minutes).
- Stir in mixed vegetables and chicken broth; simmer for about 5 minutes until slightly thickened.
- In a bowl, combine biscuit mix and milk until just combined. Avoid overmixing for fluffy biscuits.
- Pour the chicken mixture into the baking dish and evenly spoon biscuit batter on top. Bake for 30-35 minutes until biscuits are golden brown.
