- 3–4 boneless, skinless chicken breasts
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 1 medium onion
- 2 cloves minced garlic
- 1 cup long-grain white or brown rice
- 2 tablespoons fajita seasoning
- 2 tablespoons olive oil
- Juice of 1 lime
- Chopped cilantro (optional)
Instructions
- Slice chicken into thin strips and marinate with fajita seasoning and lime juice for at least 30 minutes.
- Cook rice according to package instructions using water or broth.
- Heat olive oil in a skillet over medium heat; sauté sliced onions and bell peppers until soft and slightly charred (5-7 minutes).
- Add marinated chicken to the skillet; cook until golden brown and fully cooked (7-10 minutes).
- Combine the chicken mixture with cooked rice in a bowl; stir to mix well.
- Serve hot, garnished with cilantro if desired.
