Ingredients
- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional toppings: salsa, sour cream, guacamole
Instructions
- Heat olive oil in a skillet over medium heat. Add diced bell peppers and onions; sauté until tender.
- Season vegetables with salt and pepper. Stir in shredded chicken until heated through.
- In another skillet over medium heat, lay one tortilla down and sprinkle half of the cheese on one side.
- Spoon half of the chicken mixture over the cheese; top with more cheese before folding the tortilla in half.
- Cook each side for 3-4 minutes until golden brown and cheese is melted.
- Repeat with remaining ingredients to make additional quesadillas.
- Slice into wedges and serve warm.
