- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 cup chicken broth
- 1 packet taco seasoning
- 1 cup colorful bell peppers, chopped
- Tortillas (flour or corn)
- Your favorite taco toppings (sour cream, guacamole, salsa)
Instructions
- Chop the bell peppers and mince the garlic; set aside.
- Layer the chicken breasts in the bottom of the crockpot.
- Pour in the chicken broth and sprinkle taco seasoning evenly over the chicken.
- Add the chopped bell peppers and minced garlic on top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until tender.
- Shred the chicken directly in the pot using two forks, mix well, and serve warm in tortillas with your chosen toppings.
