- 3–4 boneless, skinless chicken breasts
- Chipotle seasoning (store-bought or homemade)
- Fresh bell peppers (mixed colors)
- Red onion
- Cilantro lime rice
- Avocado
- Salsa
Instructions
- In a mixing bowl, combine olive oil and chipotle seasoning. Toss chicken breasts in the mixture until evenly coated and marinate for at least 30 minutes.
- Preheat a grill or stovetop pan over medium-high heat. Grill marinated chicken for 6–7 minutes per side or until fully cooked (165°F internal temperature).
- In another pan, sauté sliced bell peppers and red onion in olive oil over medium heat for about 5 minutes until softened.
- Cook rice according to package instructions; stir in lime juice and chopped cilantro once done.
- Layer cilantro lime rice in serving bowls, top with grilled chicken pieces and sautéed veggies.
- Finish with diced avocado and salsa.
