- 3–4 boneless, skinless chicken breasts
- 4 cups fresh spinach
- 1 cup heavy cream
- 3 garlic cloves, minced
- 1 cup low-sodium chicken broth
- ½ cup grated Parmesan cheese
- Olive oil, salt, and pepper to taste
Instructions
- Season chicken breasts with salt and pepper. Sear in olive oil over medium heat until golden brown (5-6 minutes per side). Remove from skillet.
- In the same skillet, sauté minced garlic until fragrant (about 1 minute).
- Add heavy cream and chicken broth; stir to combine and scrape any browned bits from the pan.
- Incorporate fresh spinach; cook until wilted (about 2 minutes). Stir in grated Parmesan until melted.
- Return chicken to the skillet; simmer in the sauce for an additional 5 minutes.
- Serve hot, drizzled with extra sauce.
